Chitin is used as basic ingredient and is insoluble. Chitosan is the deacetalized derivative of chitin and is soluble in acidic solvents. By adding chitosan and citric acid the optimal viscocity for the extrusion process can be achieved.

1. demineralization: HCl 20⁰C for 2 hours / filtered destilled water till neutral pH
